Puntarelle sott'olio is a typical preparation of the sprouts of a particular quality of chicory called "catalan chicory", they are lightly blanched in water and vinegar, to be then seasoned with extra virgin olive oil, vinegar, salt and pepper.

It is a very special side dish, ideal to give freshness and character to dishes based on meat, cheese, fish tartare.
